Superalbum, a programme by RSI radio and television of Southern Switzerland, interviewed the chef who runs the kitchen at Locanda San Silvestro, Ambrogio Stefanetti, who has been a Michelin star in Ticino for over 10 years. Stefanetti explains to us the typical cuisine of southern Switzerland, which is so different from what you find in the German speaking part of Switzerland. He tells us what customers are looking for in a high-quality restaurant today, what attention needs to be paid to ingredients and hospitality, and how this activity still has great value. The interview takes place in the welcoming dining room of the Locanda San Silvestro, an old building that has recently been restored and reopened to the public as well as a place of hospitality and conviviality since the 1940s.
